Zesty fresh salmon noodles paired with De Vry Distillery dry gin and lime cooler.

Recently at De Vry we started looking into pairing our spirits with unique dishes. The first dish that came to mind when I thought about our Dry Gin was something light but packed with flavour. The thought process was that you will most often enjoy a gin during lunch, and I think this dish is perfectly suited for just that. Our Dry Gin has upfront notes of juniper and citrus with hints of flowers and herbs with a crisp and dry finish. The lime cooler picks up on those flavours and has a slightly sweet but dry finish that pairs well with my salmon dish. Enjoy!

Serves 4

For the salmon

400g fresh Norwegian salmon, cut into fine noodles

200g cooked egg noodles, cold

20g pickled ginger, fine julienne

1 x spring onion, finely sliced

For the dressing

100ml light soy sauce

50ml lime juice

1tbs rice vinegar

The zest of 1 lime

2tsp white sugar

2cm ginger peeled and grated

2tbs toasted sesame oil

2tbs toasted sesame seeds


For the dressing

In a mixing bowl, combine all the ingredients and whisk until combined

To serve

Place a 50g portion of the cold noodles at the bottom of your bowl

Lightly dress with prepared dressing

Place the salmon noodles, ginger and spring onions in a mixing bowl and mix with enough dressing to coat evenly Divide into 4 portions, using your hands, twist this salmon on a plate into a ball. Place on top of noodles

Add extra dressing, spring onions and sesame for garnish

Dry gin and lime cooler


80ml Die Droë Rooinek Dry gin

50ml sugar syrup

50ml fresh lime juice

5 cm lemongrass chopped

1 egg white

To serve

Lemon grass stick

Lime wedge

Long slice of ginger


Fill a cocktail shaker with ice

Add all the ingredients to the shaker and shake well until frosted

Strain into chilled tumbler

Make sure to spoon some of the foam on top

Garnish with lemongrass, lime wedge and fresh ginger
