Maak jou eie Mayonnaise

Elke huis kan sy eie gesonde mayonnaise maak met hierdie maklike resep. Daar is ook baie verskillende variasies wat jy kan probeer vir verskillende disse.



Basic mayonnaise recipe

5 egg yolks

2 tbs Dijon mustard

2 tbs White wine vinegar

800ml Canola oil

½ tbs salt

Pinch white pepper


Method:

Add the egg yolks, mustard, vinegar and salt to the food processor. Blend for the egg mix for 20 seconds till well mixed. Start adding the canola oil slowly, but steadily. Blend till a thick consistency is reached. Add two tbs boiling water and blend quickly.


Derivatives:

Spiced soy mayo: Add soy and togorashi at the end instead of boiling water.

Lemon / lime mayo: Add lemon juice and zest instead of the boiling water.

Wasabi Mayo: Add wasabi at the end, to taste.

Anchovy aioli: Add 4 tbs anchovy and 2 cloves crushed garlic to the mustard in the beginning of the process.

Rouilli: Add 2 cloves garlic and 2 drops saffron essence to the mix in the beginning.

Herb mayo: Add chopped herbs to the beginning of the process to have a green mayo and to the end of the process to have a mayo with chopped herbs in it.

Citrus mayo: Add a reduction of citrus juice to the finished mayo and blend.
